Peru Ucayali cacao is organically produced and certified; no pesticides or chemical fertilizers are used. Peru Ucayali cacao is from Trinitario varieties. Its flavour profile is characterized by a balanced chocolaty body, low in acidity, with remarkable sweet notes of caramel and nuts and hints of fruity flavours. After manual picking the farmers bring the wet cacao beans to a central fermentation unit. Vino di grande pregio ottenuto da un' accurata cernita di uve Cannonau, in gran parte provenienti da viti oltre 40 anni di vita e coltivate ad alberello. Dopo una lenta fermentazione sulle bucce, effettuata in piccoli contenitori di acciaio per un periodo di circa 20 giorni, matura in barriques di rovere francese per 24 mesi. Segue un affinamento in bottiglia coricata per almeno 8 mesi. Splendida veste rosso granato. Al naso è imponente. Ricco di profumi di piccoli frutti maturi rossi e neri, sentori di marasca e liquirizia inchiostrati di erbe aromatiche mediterranee, spezie fini e dolci. In bocca è suademente caldo, sapido e speziato, il tutto perfettamente fuso da un ventaglio minerale. La sua ricca e vellutata struttura è ben bilanciata dalla complessità tannica e dall'elegante ed esadiente persistenza. È un vino che si accosta ottimamente alle libagioni più esclusive e raffinate. Perfetto per accompagnare formaggi di grande struttura e sapidità o importanti secondi di carne.

Its olive groves, which extend below the town, are composed exclusively of Taggiasca variety olive trees and are renowned for their particularly happy exposure. They produce olives with a lower yield than other places in the valley, but the quality of their extra virgin olive oil is excellent. Our Riviera Ligure DOP selection is obtained from olives coming from Lucinasco olive groves, pressed to perfection in our oil mill.
